Salmon w/ Whole Wheat Pasta Primevera

Ingredients:

5 oz. Salmon filet
1/2 cup Whole Wheat Pasta
Kale
Broccoli
Onion
Lemon
Pepper
1 Tbsp. Olive Oil
Balsamic Vinegar
Parmesan Cheese
Salt
Pepper

Preparing the Meal

Cook pasta according to package.

Heat a skillet over medium heat for 1 minute. Drizzle olive oil in pan. Add vegetables. Cook on medium heat for about 8-10 minutes or until vegetables are at desired tenderness. 

Add cooked pasta to skillet. Stir well. Turn off heat and drizzle lightly with balsamic and squeeze lemon over top. Transfer to a plate and top with pepper and Parmesan cheese.

Squeeze lemon over Salmon and lightly top with salt. 

Heat pan on high heat for 1-2 minutes. Add very little olive oil. 

Place Salmon, skin side down, in the pan. After 1-2 minutes of cooking reduce heat to medium. Cook Salmon until the edges and top begin to turn light pink (4-6 minutes). Flip. Cook 1-2 minutes and remove from pan. 

Let Salmon sit for 1-2 minutes while you are finishing the other part of the dinner. No fear if the middle is a warm red. Salmon is great cooked through or raw! Just don't eat the skin!


Tips:
- When at the store don't be afraid to ask for the fish to be cut into a 4 or 5 oz. filet
- If you are new to cooking fish Salmon is a good place to start due to the skin's protection while cooking
